Sweet Plantain Ice Milk

 Sweet Plantain Ice Milk

Makes 1 Quart Plus Overrun

2 Ripe Plantains (skin totally black and plantain soft)-peeled and cut in 1”pieces
2 Cups Milk
1 Can Sweetened Condensed Milk (1- 14 oz can)
1 tsp. Pure Vanilla Extract
Pinch Fine Sea Salt

Place the plantains in a blender and add enough of the milk to cover the plantains. Puree until very smooth, stir in the rest of the milk.

Place the condensed milk in a bowl. Gradually whisk in the plantain puree and the milk until smooth. Freeze in an ice cream machine according to manufacturers directions. Transfer to a container and place in freezer to for a firmer ice milk.

Serve in chilled bowls garnished with sliced sweet plantains sautéed in butter with brown sugar and rum. Enjoy!
