Braised Buffalo Chicken Nachos

    Braised Buffalo Chicken Nachos
    Skip the normal nachos this game day.

    • 2 tablespoons oil
    • 8 boneless skinless chicken thighs
    • 2 cups sliced onions
    • 1 teaspoon celery salt
    • 1 tablespoon smoked paprika
    • 6 ounces light beer
    • ¼ cup Frank’s Red Hot

    Place oil, chicken thighs, and onions in a large heavy bottomed pot over medium heat. Cook stirring occasionally for 15 minutes. Next add the celery salt and smoked paprika and stir in well. Pour in the beer and simmer for 15 minutes. Stir in the ¼ cup red hot and cook over medium low until almost dry and shredded.

    To make nachos:

    Place chips on an oven proof platter top with 2 cups of Braised Buffalo Chicken, 1/2 cup crumbled blue cheese, ½ cup chopped onion, ½ cup chopped celery, ½ cup chopped tomato and place in a 450 degree oven for 3-5 minutes or until cheese is melted.
