Cuban Pork Sandwich

  • 1 tablespoon oil
  • 2 cups sliced onion
  • 1 pound pork loin cut in half length wise and sliced thinly
  • 2-3 cloves garlic chopped
  • 1 tablespoon adobo
  • 1 tablespoon kosher salt
  • 2-3 dashes hot sauce
  • 6 Kaiser Rolls
  • 2 large pickles sliced thin
  • ¼ cup whole grain mustard
  • ¼ cup sour cream

Heat oil in large pan, add the onions and cook for 2-3 minutes. In the meantime mix the pork well with the garlic, adobo, and kosher salt. Then add the pork to the pan and stir well to separate the slices. Add the hot sauce and sauté until pork is cooked all the way through.
Cut the Kaiser Rolls in half to get a top and bottom.  Divide the pork mix evenly onto the 6 bottoms of the roll. Top with thinly sliced pickles. Mix the mustard and sour cream together and spread evenly on the top half of the roll. Close the sandwiches and pre heat a Forman grill. Grill until crispy 1 or 2 at a time depending on the size of your grill. Serve with oven fires and more pickles.
