This is the perfect season for a quesadilla made with fresh garden tomatoes.
6 flour tortillas 10 inch-burrito size
4 large tomatoes sliced
2 cups shredded cheese
¼ cup basil chopped
½ teaspoon kosher salt
Preheat the George Forman grill.. Lay the tortillas on a clean work surface and divide the shredded cheese evenly to cover half of each of the six tortillas. Then spread the tomato slices evenly between the tortillas on top of the cheese along with the chopped basil. Sprinkle each with kosher salt then fold each tortilla in half covering the ingredients and forming a half moon. One by one place each tortilla on the grill with the open side pointing away from the opening of the grill. Close the lid and grill for about 3 minutes or until crisp. Cut into quarters and repeat with the rest. Serve with sour cream and your favorite salsa.
