Green Pea Hummus

Green Pea Hummus

1, 2 lb. package frozen peas
2 T. Italian Parsley, coarsely chopped
1 t. chopped garlic
½ cup olive oil
2 T fresh lemon juice
Salt and Pepper to taste
Shaved cheese (Asiago) for top (approx ½ cup)


Procedure:

Thaw peas and put in food processor with parsley and garlic. Pulse until coarsely chopped.
With the motor running, add the olive oil in a thin, steady stream until it reaches a thick consistency.
Transfer to a mixing bowl and add lemon juice. Season with salt and pepper and top with the shaved cheese.
Serve with toasted pita chips.
