2 ½ oz. bourbon whiskey
½ oz. simple syrup (1 to 1 – sugar to water)
8 mint leaves
Lightly muddle mint and syrup in a julep cup. Add bourbon, crushed ice, and stir. Top with more crushed ice and mint sprigs.
The important thing is to muddle lightly, so that the leaves don’t actually get broken up.
That way you have non-bitter mint flavor, and also no tiny pieces of leaf clogging up your straw.
