Mulled Apple Cider

Apple juice 1/2 gallon

Brown sugar 1/2 cup

Vanilla bean two segments

Cinnamon whole stick 2 sticks

Whole black peppercorn 1 table spoon

Whole allspice 1 table spoon

Whole clove 1 table spoon

Method

In a heavy bottomed pot, place cinnamon, peppercorns, allspice, and cloves. Toast ingredients for 2-3 minutes over medium heat to help release their flavor and aroma.  After the spices have been toasted add the apple juice and vanilla bean and bring to a boil. When the juice reaches a boil add the brown sugar and stir until all of the sugar is dissolved. Reduce hear and allow to simmer for 10-15 minutes. The longer it simmers the more intense the flavors will become. Before straining and serving you can add additional brown sugar to taste. For those who desire a sweeter drink add more brown sugar.

Note: dried spices can be used in place of whole, however the final drink will have a more cloudy appearance. Also you will need less of the dried spices than the whole.
