Pulled BBQ Sandwich

A perfect recipe for the big game.

  • 1 tablespoon oil
  • 2 cups sliced onion
  • 1 tablespoon smoked paprika or regular paprika
  • ¼ cup ketchup
  • ¼ cup water
  • 1 teaspoon granulated garlic
  • 1 tablespoon balsamic vinegar or red wine vinegar
  • 1 tablespoon molasses
  • 1 tablespoon Worcestershire sauce
  • ¼ cup bourbon
  • 3 cups shredded left over roast chicken
  • 1 cup shredded cheddar cheese
     

Heat the oil in a medium sized pan over medium heat then add the onions. Stir slowly until the onions caramelize which should take about 3-5 minutes. Sprinkle in the paprika and stir well to incorporate. Next add the ketchup, water, granulated garlic, vinegar, molasses, Worcestershire sauce, and bourbon. Cook for a couple minutes and toss in the shredded chicken. Mix well. When hot place a mound of the chicken on a roll or toasted bread. Top with cheese and the top of a roll or another slice of toasted bread. Makes 6-8 modest sandwiches.
