- 1-3 pound kabocha squash
- 1 tablespoon unsalted butter
- 2 teaspoons kosher salt
- 1/8 teaspoon white pepper
- 1 tablespoon maple syrup
Cut top off the squash and scoop out the seeds. Place the butter, salt, pepper, and maple syrup in the squash and replace top. Place on a baking dish and roast in a preheated 350 degree oven. Roast for 1 ½ - 2 hours or until soft. Remove from oven a cool to room temperature. Then remove top and scoop cooked flesh away from the skin and place in a mixing bowl. Mash with a fork. Adjust seasonings with salt and pepper. Reheat in oven before serving.
