Soft Turkey Tacos

Yummy tacos, a healthy, nutritious and affordable meal.

Makes 12 tacos

  • 1 tbsp. vegetable oil
  • 1 lb. lean ground turkey
  • 1 cup small, diced onion
  • 2 tsp. cumin
  • 1 tsp. paprika
  • 1 tsp. garlic powder
  • 1 tsp. cayenne pepper
  • 2 tsp. salt
  • ¼ cup tomato paste
  • 1 tbsp. molasses
  • 12–6 inch corn tortillas
  • 2 cups shredded cheddar cheese
  • Sour cream
  • Favorite salsa

Preheat the oven to 350 degrees.

Heat the oil in a medium pot over medium-high heat.

Add the turkey and sear for 1 minute.

Stir in the onion.

Continue searing until the turkey is nearly cooked through.

Combine the cumin, paprika, garlic powder, cayenne pepper and salt in a small mixing bowl, then incorporate it into the turkey.

Mix in the tomato paste and molasses.

Cook until the turkey is thoroughly cooked.

Place the tortillas on a baking sheet.

Spread the cheese evenly over each tortilla, then heat in the oven until the cheese is melted.

Divide the warm turkey mixture evenly over the cheese. Fold in half and serve.
