Spaghetti Squash Noodles Three Ways

To Prepare Spaghetti Squash Noodles:

Spaghetti Squash-medium size is best

Preheat oven to 400ºf. Split squash in half lengthwise. Place cut sides down on a greased cookie sheet. Bake in the oven for about 45 minutes or more, until a paring knife can pierce through the skin and into the flesh of the squash. Remove from the oven, flip over and allow to cool to a warm room temperature. Carefully scoop out the flesh and gently separate into noodles. These noodles can be then prepared many ways:

Spaghetti Squash Noodles with Honey, Butter,Almond, and Thyme

Toss the noodles with melted butter and flavor to taste with honey, a pinch of fresh chopped thyme,  and a hint of almond extract. Season to taste with salt and pepper.  Reheat in the oven or microwave.

 

Spaghetti Squash Noodles with Tomato Basil Sauce

Simply serve like pasta by reheating the noodles in the microwave or oven and serve with your favorite tomato sauce, garnish with fresh basil and a sprinkling of Parmesan cheese.

Spaghetti Squash Noodles with Bacon, Sage, and Sour Cream

Toss some cooked, chopped bacon, sauteed onions, a pinch of fresh chopped sage, and sour cream into the noodles, seasoning to taste with salt and pepper. Reheat in the microwave or oven.
