Turkey "Shepherd's Pie"

Turkey shepherd's pie

1 ½ Cups Cooked Turkey Meat-skin removed, cut or torn into ¾” pieces
2 Cups Turkey Gravy-cooled until firm
½ Cup Frozen Peas-thawed
½ Cup Carrots-diced ½”, cooked
½ Cup Corn Kernels-frozen thawed, or canned drained
2 tsp. Fresh Rosemary and or Thyme-chopped finely
½ tsp. Black Pepper
2 Cups Mashed Potatoes
¼ Cup Melted butter

Preheat oven to 375ºf. Combine the first 7 ingredients in a bowl, mix and place in a casserole dish or individual baking dishes, spreading out evenly.

Place the mashed potatoes in a bowl and stir to make softer and spreadable. Evenly spread the potatoes over the top of the turkey and gravy mixture. Drizzle the top with the melted butter and place in the oven for about 35 minutes for large casserole or 20 minutes for individual dishes. The filling should be hot and the top has achieved a golden brown color. Enjoy!
