Waffles With Caramelized Apples

Waffles
  • 2 Cups All-Purpose Flour
  • 1 tsp. Salt
  • 4 tsp. Baking Powder-double acting
  • 2 Tbsp. Sugar
  • 2 Eggs-yolks carefully separated from whites
  • 1 1/2 Cups Milk
  • 4 Tbsp. Canola Oil

Sift the first four ingredients together and place in a large bowl. In a separate bowl, whisk together the egg yolks, milk, and canola oil until smooth. Combine liquid ingredients gently into the dry ingredients, mixing just to combine. Do not over mix or it will make a tough waffle. Now in a separate bowl, whip the egg whites with an electric mixer until they are at medium stiff peaks. Using a rubber scraper, gently fold the egg whites into the batter, combining until no white streaks remain. Cook waffles in a hot waffle iron (or use batter to make pancakes) according to waffle iron manufacturers directions. Serve hot with the caramelized apples (recipe below), whipped cream, and powdered sugar. Enjoy!

Caramelized Apples

  • 1 Cup Sugar
  • 3 Apples-peeled, cored, and diced 1/2-inch
  • 2 Tbsp. Butter
  • 2 tsp. Vanilla Extract
  • 1 tsp. Ground Cinnamon

Place sugar in an even layer in heavy bottomed saute pan. Heat on medium high heat stirring occasionally with a heatproof spoon or spatula until a deep brown color. Immediately and carefully add the apples and toss in the caramel. Cook for about 2 minutes to soften the apples, stirring occasionally. Carefully add the butter, vanilla, and cinnamon, stirring in vigorously to create a syrup. Serve warm over waffles.
