Waldorf Salad

  •  ½ cup dried cherries
  • ½ cup bourbon
  • 1 cup celery – ½ inch dice
  • 1 cup toasted walnuts
  • ½ cup sour cream
  • 1 teaspoon Dijon mustard
  • 4 granny smith apples ½ - ¾ inch dice
  • 2 tablespoons sugar
  • 1 tablespoons kosher salt
In a small pan combine the dried cherries and bourbon and place on medium high heat. Carefully burn off the alcohol and reduce until cherries are plumped and almost dry. Then in a large mixing bowl combine the cherries, chopped celery, toasted walnuts, sour cream and a mustard. Next toss in the chopped apples, season with sugar and kosher salt and mix well. Serve over shredded lettuce. Makes 4-6 servings.
