Watermelon Poke

Dressing (yields about 1 qt)

  • 2 oz minced ginger
  • 2 oz minced garlic
  • 4 lemons, juiced
  • ¾ cup soy sauce
  • ¾ cup mirin
  • 2 ½ cups 10% oil
  • 1 tsp chili flake
  • 1 tsp ground black pepper
  • 1 tbs sesame oil
  • ½ cup maple syrup

Instructions:

  • Finely mince the garlic and ginger. Put all in the blender and puree.

Sticky Rice

Ingredients:

  • 2 c sushi rice
  • 2 ½ c water
  • 1 tsp kosher salt
  • 2 tbs Mirin
Instructions:
  • Soak rice in cold water for a half hour or more then strain and rinse with more cold water.
  • Add rinsed rice and 2 ½ c water with salt to rice cooker and turn on for automatic timer or set to 15-20 minutes of cook time and let stand 5 minutes, then toss with Mirin.

Assembly

Ingredients:

  • 1 c medium dice seedless watermelon
  • 1 bunch scallion
  • 1 tsp sesame seeds
  • 1 radish, shaved thin
  • ¼ cucmber, shaved thin
  • ½ avocado, medium dice
Instructions:
  • Place 1 cup of warm (or cold) cooked sticky rice in bottom of dish.
  •  Dress watermelon with 1 oz of dressing and put on top of rice. Garnish the top of dish with rest of ingredients
