Sesame Encrusted Ahi Tuna:

  • 8 oz. tuna fillet
  • 1 tbsp. sesame seeds

Risotto Cake:

  • 2 oz. lemongrass
  • 1 sprig of fresh thyme
  • 4 oz. rissoto
  • Egg and flour for breading
  • 3 oz. Parmesan cheese 

Hot Lobster Roll topped with bacon bread crumbs:

  • 6 oz. poached lobster
  • 2 slices of bacon
  • 4 oz. Ritz crackers
  • 1 10-inch hot dog roll
  • 3 oz. butter
