Sesame Encrusted Ahi Tuna:
- 8 oz. tuna fillet
- 1 tbsp. sesame seeds
Risotto Cake:
- 2 oz. lemongrass
- 1 sprig of fresh thyme
- 4 oz. rissoto
- Egg and flour for breading
- 3 oz. Parmesan cheese
Hot Lobster Roll topped with bacon bread crumbs:
- 6 oz. poached lobster
- 2 slices of bacon
- 4 oz. Ritz crackers
- 1 10-inch hot dog roll
- 3 oz. butter
