Leftover Turkey BBQ Sandwich

1 Tbsp. Vegetable Oil
½ Cup Onions-finely chopped
2 tsp. Garlic-minced
½ tsp. Cumin
¼ tsp. Ground Coriander
¼ Cup Cider Vinegar
¾ Cup Ketchup
2 Tbsp. Molasses
1 Tbsp. Honey
2 Cups Shredded Cooked Turkey Meat
1 Cup Cole Slaw
4 Sandwich Rolls-warmed in the oven
Salt and Black Pepper to Taste
Hot Pepper Sauce to Taste

To prepare the bbq sauce heat a saute pan on medium high heat. Add the vegetable oil, and onions. Cook for two minutes or until tender. Add the garlic, cumin and coriander, cook for 30 seconds. Add the vinegar, ketchup, molasses and honey. Whisk smooth and simmer 5 minutes. Season to taste with salt, pepper, and hot sauce. If sauce gets too thick, thin with a little water. When ready to serve, add the turkey meat and simmer until heated through.

To serve, divide the cole slaw on the bottom of the sandwich rolls. Top with the turkey bbq mixture and finish with the roll top. Enjoy!
