Connecticut Maple Dumplings

  • 1 cup all purpose flour
  • 1 tsp. kosher salt
  • 1 tsp. double acting baking powder
  • 1 egg-large size
  • 1/2 cup milk
  • 2 cups Connecticut maple syrup
  • As needed whipped cream or ice cream, fresh fruit

Place the flour, salt and baking powder in a bowl and whisk to distribute the baking powder. In a separate bowl, whisk together the egg and milk. Add the liquid ingredients to the dry ingredients and stir with a rubber scraper until smooth. Let the dumpling dough sit for 15 minutes.

Heat the maple syrup in an 8” wide saute pan to a gentle simmer. Spoon out generous tablespoons of the dumpling dough into the maple syrup. (You should get 8.) Allow space around each dumpling to expand. Gently simmer covered for about 5 minutes. Gently flip the dumplings over and simmer uncovered for another 5 minutes. Carefully place 2 dumplings in each serving dish, drizzle with the hot maple syrup and garnish with whipped cream or ice cream and fresh fruit. Enjoy! Recipe serves four people.
