This recipe makes about 1 quart.
Ingredients:
- 3 large cucumbers, cut in half lengthwise, seeded and sliced
- 1 Tsp. kosher salt
- 1 Tsp. sugar
- 1 cup thinly sliced red onion
- 2 Tbsp. chopped fresh dill
- ½ cup sour cream
- 2 Tbsp. red wine vinegar
- 2 Tsp. sugar
- 1 Tsp. kosher salt
Instructions:
- Take the sliced cucumber, place it in a bowl and toss with the 1 teaspoon of kosher salt and 1 teaspoon of sugar.
- Let sit for 20 minutes and drain well.
- Place the cucumber slices back in the bowl and toss well with sliced red onion and chopped dill sour cream, and red wine vinegar.
- Adjust seasoning with 2 teaspoons of sugar and 1 teaspoon of kosher salt.
- Place in serving bowl and chill until ready to serve.
