    This recipe makes about 1 quart.


    • 3 large cucumbers, cut in half lengthwise, seeded and sliced
    • 1 Tsp. kosher salt
    • 1 Tsp. sugar
    • 1 cup thinly sliced red onion
    • 2 Tbsp. chopped fresh dill
    • ½ cup sour cream
    • 2 Tbsp. red wine vinegar
    • 2 Tsp. sugar
    • 1 Tsp. kosher salt


    • Take the sliced cucumber, place it in a bowl and toss with the 1 teaspoon of kosher salt and 1 teaspoon of sugar.
    • Let sit for 20 minutes and drain well.
    • Place the cucumber slices back in the bowl and toss well with sliced red onion and chopped dill sour cream, and red wine vinegar.
    • Adjust seasoning with 2 teaspoons of sugar and 1 teaspoon of kosher salt.
    • Place in serving bowl and chill until ready to serve.
