Drumstick “Osso Buco” Style

Ingredients:

  • 3 - 4 Large Turkey Drumsticks
  • 2/3 Cup Flour
  • 1/2 Cup Olive Oil
  • 1 Cup diced or Not Carrot
  • 1 Cup diced Celery
  • 1 Cup diced Onion
  • 1/4 Cup diced Garlic
  • 1 Cup White Wine
  • 1 Cup Turkey or Chicken Stock
  • 1 Lime Zest
  • 1 Cans Whole Peeled Tomatoes
  • 6 Stalks Fresh Basil – Minced
  • 1 teaspoon Sea Salt
  • 1/2 teaspoon Fresh ground pepper

Directions:

  1. Put flour in large container (disposable 1/2 tin pan)
  2. Put drumstick in flour, keep rolling till well-covered
  3. Heat oil in large casserole pan
  4. Put rolled, floured drumstick in oil (rotate cooking drumstick) about 10 min. each drumstick
  5. Place the drumsticks on a plate
  6. Add carrot, celery, onion, garlic to casserole pan and cook about 6 min. until a little soft.
  7. Add wine, add turkey drums back in and cook 3 min.
  8. Add stock, tomatoes and spice and bring to boil
  9. Simmer about 2 hours
  10. Take out drumsticks
  11. Cook liquid till reduced by one half
  12. Garnish with lime and basil.
