- 3 ears of sweet corn, husked and kernels removed
- 5 plum tomatoes, chopped
- 1 clove garlic, minced
- 1 jalapeno pepper, minced
- ¼ cup chopped cilantro
- Juice of 2 limes
- 2 Tbsp. olive oil
- 1 Tbsp. honey
- Salt and pepper to taste
- Place sweet corn kernels, chopped tomato, garlic, jalapeno and cilantro in a bowl.
- Add lime juice, olive oil, honey and salt and pepper.
- Taste and adjust seasonings with salt and pepper if necessary.
