Fresh Lemon Italian Ice with Rosemary

Serves four or more

  • 2 cups of water
  • ½ cup sugar
  • 2 large rosemary sprigs, crushed gently
  • ¾ cup fresh lemon juice
  • Zest from two lemons
  1. Heat water, sugar and rosemary until just boiling. Remove from heat let rosemary steep for 30 minutes.
  2. Strain and stir in the lemon juice and zest.
  3. Let cool to room temperature and divide evenly into serving containers or ice shaver cups. Freeze fully for four hours or overnight.
  4. When ice is frozen, it can be shaved with an ice shaver for a fluffy texture or quickly pulsed in a food processor, or served as it.
  5. Garnish with fresh berries of the season, a crisp cookie and a rosemary sprig. Enjoy!
