Succotash With Lemon Vinaigrette




    Determined Triathlete Never Lost Hope

    Ingredients for Succotash:

     1 ½ Cup Sweet Corn Kernels, Blanched
     1 ½ Cup Heirloom Tomato, Seeded and Diced
     1 ½ Cup Freshly Shelled Soybeans or Fava, Blanched
     ½ Cup Red Onion, Diced
     2 tablespoon Flat Leaf Parsley, Lightly Chopped
     1 teaspoon Fresh Thyme Leaves
     1 tablespoon Snipped Chives
    1/2 teaspoon Kosher Salt

    Ingredients for Lemon Vinaigrette:
    ¼ Cup Olive Oil
    1 tablespoon Lemon Juice
    Zest from Half a Lemon
    1 teaspoon Honey
    ½ teaspoon Kosher Salt

    Mix all succotash ingredients, let sit for 20 minutes. 
    Mix vinaigrette.
    Dress Succotash to Taste.
