Tomato Sandwiches

    How to turn a summer staple into lunch.

    • 4 slices sourdough bread
    • 2 tablespoons mayonnaise
    • 4 medium ripe tomatoes
    • 8 basil leaves
    • 1/4 cup crumbled cheese
    • 1/2 cups loosely packed baby greens
    • 1 tablespoon balsamic dressing
    • sea salt and black pepper to taste

    Toast the sour dough and spread mayo on all 4 slices. slice the tomatoes into 1 inch slice and place 4 slices on two of the slices of bread. Top with basil leaves and crumbled feta cheese. Toss baby greens with balsamic dressing. Divide greens on each sandwich top with toasted sour dough and carefully cut in half.  Makes 2 large sandwiches.
