Connecticut Apple Skillet Cake

  • 2 Apples-peeled, cored, sliced 1/3” thick
  • 2 Tbsp. Butter
  • ¼ Cup Granulated Sugar
  • ¼ tsp. Ground Cinnamon
  • 1 tsp. Pure Vanilla Extract
  • ½ Cup All Purpose Flour
  • ½ tsp. Salt
  • 3 Tbsp. Granulated Sugar
  • 3  Eggs
  • ½ Cup Milk
  • 2 Tbsp. Canola Oil

Preheat oven to 425ºf. Heat an 8” non stick oven proof sauté pan on medium high heat. Add the apples and butter and cook stirring occasionally for about 10 minutes or until slightly tender and slightly golden brown.

Prepare the batter by sifting the flour, salt, and second measure of sugar into a bowl. In a separate bowl, whisk together the eggs, milk, and canola oil until smooth. Add the liquid to the dry ingredients in about 1/3’s  whisking smooth after each addition.

When the apples are slightly tender, pour the batter over the apples and place pan in the oven. Bake for about 15 minutes or until the cake rises and gets golden brown and slightly crisp on top. Serve directly from the pan and garnish with whipped cream or ice cream.
