Spring Ham and Pea Pasta

  • 1 pound Ditalini pasta cooked in salted water and strained
  • 1 tablespoon oil
  • 1 cup diced onions
  • 4 cloves garlic chopped
  • 2 cups smoked diced ham
  • 2 cups chopped fresh tomato
  • 1 cup dry white wine
  • 1 cup prepared tomato sauce
  • ½ cup heavy cream
  • 2 cups frozen peas
  • 2-6 dashes hot sauce
  • ½ cup grated parmesan cheese

Heat oil in large pot over medium heat and add onions. Cook for 1-2 minutes or until lightly caramelized. Add the chopped garlic, chopped smoked ham, and chopped tomato. Cook for 2 minutes stirring occasionally. Pour in the wine and reduce until almost dry. Next add the tomato sauce and cream and bring to a simmer. Toss in the cooked pasta and peas and cook until warmed. Add hot sauce and mix in cheese.  Transfer to large pasta serving bowl or individual bowls. Makes 8 servings.
