Stir Fried Rice

  • 1 tablespoon oil
  • 1 cup chopped onion
  • 1 cup chopped red pepper
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 cup chopped turkey
  • 4 cups cooked rice
  • 2 eggs whipped
  • ¼ cup soy sauce
  • 1 tablespoon sesame oil
  • ½ teaspoon hot sauce
  • 1 cup peas
  • 2 tablespoon chopped scallions
  • ¼ cup chopped peanuts

Hit a large sauté pan or wok and pour in the oil and onions. Stir fry for 30 seconds and add the red pepper. Stir for 30 seconds on high heat and add the garlic and ginger. Cook for 30 seconds more and reduce heat to medium low. Add the cooked rice and mix in well. Now, while stirring pour in the whipped eggs and stir until fully cooked. Drizzle in the soy and sesame oil and mix well. Add the hot sauce, peas and scallion and mix in well. Serve with chopped peanuts on top. Makes 6 servings.
