Asian Turkey Salad Wraps with Cilantro and Lime

  • 4  Rice Paper Wrappers-8” size, round or square size
  • ½ Lb. Cooked Turkey Meat-sliced thinly or shredded
  • 1 Cup Lettuce-shredded
  • ½ Cup Carrot-peeled and turned into ribbons using vegetable peeler
  • ¼ Cup Red Onion-thinly sliced
  • ¼ Cup Red Cabbage-thinly shredded
  • 4 Tbsp. Cilantro Leaves
  • 1 Lime-juiced
  • Salt and Black Pepper
      

Soak rice paper wrappers in a large bowl of cold water for 2 minutes or until lightly softened. Gently drain and lay out wrappers on the counter. Place the turkey, lettuce, carrot, red onion, cabbage and cilantro in a bowl. Add the lime juice and toss to evenly coat, seasoning to taste with salt and pepper. Divide the meat/lettuce mixture among the rice paper wraps. Fold the sides of the wrapper in and roll up into a large cigar shape. Slice in half and serve with sweet chile dipping sauce.  Serves 4.
