- 4 large sandwich wraps
- 4 eggs
- 1/2 teaspoon kosher salt
- 1/8 teaspoon black pepper
- 2-4 dashes hot sauce
- 1 teaspoon oil
- 8 strips bacon cook until crisp
- 1 cup grated cheddar cheese
In a mixing bowl whisk together the eggs, kosher salt, pepper and hot sauce.
Heat the oil in a non stick pan over medium high heat. Pour in the eggs and stir with a spoon until eggs are cooked.

Set aside while you lay the tortillas on a table.
Divide the bacon and cheese evenly on the bottom half of each half. Top with the cooked eggs and fold in half.
Pre heat your Foreman grill and place the tortillas on at a time and toast until crisp and nicely browned about 5 minutes.
Repeat with the rest of the quesadillas and cut into wedges and serve with sour cream on the side.
