Crisp and Light Rice Flour Waffles

  • 1/2 Cup All Purpose Flour
  • 1/2 Cup Rice Flour-available in the Asian or Latin section of the market
  • 1/2 tsp. Salt
  • 2 tsp. Sugar
  • 1 1/2 tsp. Baking Powder
  • 2 Eggs
  • 3/4 Cup Milk
  • 4 Tbsp. Canola Oil

Sift together into a large bowl the flour, rice flour, salt, sugar, and baking powder. In a separate bowl, whisk together the eggs, milk and oil. Pour the liquid ingredients into the dry ingredients and mix just until combined.

To make waffles pour enough batter into a lightly greased, preheated waffle iron to almost cover the surface. Close the iron. Cook the waffles until deep golden and crisp. Repeat with the remaining batter. Serve warm with your favorite toppings and syrups. Enjoy!
