Green Bean and Feta Salad

This recipe makes 2 quarts.


  • 4 cups cut and cleaned green beans
  • 2 cups chopped ripe tomato
  • 1 cup slice red onion
  • 1 cup crumbled feta cheese
  • ½ cup chopped green olives
  • 2 cloves chopped garlic
  • ¼ cup good olive oil
  • Juice of 2 lemons
  • 1 teaspoon maple syrup
  • Salt and pepper to taste


  • In a large mixing bowl combine the green beans, chopped tomato, sliced red onion, feta, green olives and chopped garlic.
  • Toss with the olive oil, lemon juice, and maple syrup. Season with salt and pepper to taste and place on a serving platter.
