This recipe makes 2 quarts.
Ingredients:
- 4 cups cut and cleaned green beans
- 2 cups chopped ripe tomato
- 1 cup slice red onion
- 1 cup crumbled feta cheese
- ½ cup chopped green olives
- 2 cloves chopped garlic
- ¼ cup good olive oil
- Juice of 2 lemons
- 1 teaspoon maple syrup
- Salt and pepper to taste
Instructions:
- In a large mixing bowl combine the green beans, chopped tomato, sliced red onion, feta, green olives and chopped garlic.
- Toss with the olive oil, lemon juice, and maple syrup. Season with salt and pepper to taste and place on a serving platter.
