- 2 large Lyman Orchard honey crisp apples
- 1 lemon, juiced
- 1 red bell pepper, diced
- 2 Tbsp. grape seed oil
- 3 Tbsp. chopped parsley
- 2 Tbsp. red onion, diced
- Salt and pepper to taste
- Prepare all ingredients and combine in a medium bowl.
- Stir until dressing evenly coats the vegetables.
Goes great over grilled chicken or a tuna steak.
