HUMMUS
- 29 oz can chick peas, drained (save aquafaba for cocktail)
- 2 tablespoons kosher salt
- 1 lemon, zest and juice
- 8 oz tahini
- 1/2 cup water
- 1/2 cup canola oil
-Puree all ingredients smooth in food processor
SAVORY PEACH
- 3 ripe peaches, rough chopped
- 1 tablespoon white vinegar
- 2 teaspoons sugar
- 1/2 teaspoon kosher salt
- 3 leaves basil, chiffonade
-Bring all ingredients except basil to a simmer, cool and add basil
This recipe makes 6 servings.
GIN & JUICE
- 2 oz grapefruit juice
- 1 1/2 oz gin
- 1/2 oz elderflower liquor
- 1/2 oz aquafaba
-Add all ingredients to cocktail shaker with ice and shake vigorously, then remove ice and shake well again to froth. Pour into coupe glass
