Hummus With Savory Peach, Gin & Juice

HUMMUS

  • 29 oz can chick peas, drained (save aquafaba for cocktail)
  • 2 tablespoons kosher salt
  • 1 lemon, zest and juice
  • 8 oz tahini
  • 1/2 cup water
  • 1/2 cup canola oil

-Puree all ingredients smooth in food processor

SAVORY PEACH

  • 3 ripe peaches, rough chopped
  • 1 tablespoon white vinegar
  • 2 teaspoons sugar
  • 1/2 teaspoon kosher salt
  • 3 leaves basil, chiffonade

-Bring all ingredients except basil to a simmer, cool and add basil

This recipe makes 6 servings.

GIN & JUICE

  • 2 oz grapefruit juice
  • 1 1/2 oz gin
  • 1/2 oz elderflower liquor
  • 1/2 oz aquafaba

-Add all ingredients to cocktail shaker with ice and shake vigorously, then remove ice and shake well again to froth. Pour into coupe glass
