Ingredients:
- 1 pork tenderloin, sliced into quarter-inch slices
- 2 Tbsp. corn starch
- 2 Tbsp. oil
- 1 cup sliced onion
- 1 cup sliced red pepper
- 1 cup chopped celery
- 3 cloves garlic minced
- 1 Tbsp. minced ginger
- ½ cup soy sauce
- ¼ cup rice vinegar
- 3 Tbsp. ketchup
- 1 Tbsp. honey
- Black pepper, to taste
- Garnish with chopped roasted peanuts and chopped scallions if you like.
Instructions:
- Place sliced tenderloin in a bowl and mix with the cornstarch.
- Heat the oil in a wok or large sauté pan over high heat. Add the pork and stir fry until it is just cooked. Remove from the pan and set aside.
- Next add the onion, pepper and celery to the pan and stir fry over medium heat, adding more oil if necessary.
- Toss in the garlic and ginger and cook until vegetables are just cooked.
- Place the pork back in the pan and mix well. Pour in the soy sauce, rice vinegar, ketchup and honey and bring to a simmer.
- Cook until the liquid thickens slightly.
- Season with the pepper and transfer to a large serving platter.
- Garnish with chopped peanuts and scallions. Serve with rice.
