Pork Tenderloin Stir Fry

Ingredients:

  • 1 pork tenderloin, sliced into quarter-inch slices
  • 2 Tbsp. corn starch
  • 2 Tbsp. oil
  • 1 cup sliced onion
  • 1 cup sliced red pepper
  • 1 cup chopped celery
  • 3 cloves garlic minced
  • 1 Tbsp. minced ginger
  • ½ cup soy sauce
  • ¼ cup rice vinegar
  • 3 Tbsp. ketchup
  • 1 Tbsp. honey
  • Black pepper, to taste
  • Garnish with chopped roasted peanuts and chopped scallions if you like.

Instructions:

  • Place sliced tenderloin in a bowl and mix with the cornstarch.
  • Heat the oil in a wok or large sauté pan over high heat. Add the pork and stir fry until it is just cooked. Remove from the pan and set aside.
  • Next add the onion, pepper and celery to the pan and stir fry over medium heat, adding more oil if necessary.
  • Toss in the garlic and ginger and cook until vegetables are just cooked. 
  • Place the pork back in the pan and mix well. Pour in the soy sauce, rice vinegar, ketchup and honey and bring to a simmer.
  • Cook until the liquid thickens slightly. 
  • Season with the pepper and transfer to a large serving platter.
  • Garnish with chopped peanuts and scallions. Serve with rice.
