Recipe: Seared Scallop Tacos with Cilantro Orange Dressing

Seared Scallop Tacos:
1 Lb. sea scallops
1 Tbsp. Oil
TT- Salt and Pepper
4 Corn tortillas
4 Leaves Bibb Lettuce
2 Heirloom Tomatoes(Diced)
½ Avocado

Orange Cilantro Dressing:
1 Orange (Juiced)
2 Tbsp. salad Oil
4 Sprigs of cilantro (chopped)
1 Tsp. white wine vinegar
1 Tsp. Dijon mustard
1 Tsp. sugar

Instructions:
1. In small bowl whisk orange juice, vinegar, Dijon, cilantro and sugar together. Still whisking, add oil slowly to mixture until well mixed and put aside for later.
2. Heat sauté pan on medium heat add oil.
3. Sear scallops on both sides for two minutes let rest on a plate. Season as needed.
4. In pan warm tortillas on both sides.
5. Take warm tortillas fill with lettuce, diced tomatoes, sliced avocado and scallops top with dressing.
6. Enjoy!
