Spicy Chicken, Kielbasa and Sauerkraut


  • 1 pound kielbasa cut into pieces
  • 6 boneless-skinless chicken thighs
  • A 2 pound bag of sauerkraut drained and rinsed
  • 1 large onion sliced
  • 1 red pepper sliced
  • A 12 ounce beer
  • 1/4 cup or more Sriracha hot sauce
  • 1/2 teaspoon kosher salt
  • black pepper to taste
  • 1 teaspoons sugar
  • 1 teaspoon dried thyme
  • 1/4 cup white vinegar


Place the kielbasa pieces and chicken thighs on the bottom of a slow cooker. top with the sliced onions and sliced red pepper. Then add the rinsed sauerkraut. Pour in the beer and add the hot sauce, salt, pepper, sugar, thyme and vinegar. Cover with the top and set on high for 4 hours or low for 8 hours.
