Split Pea Hummus

This recipe makes two pints.


  • 1 pound dry split peas cooked in boiling salted water until soft then drained
  • 4 cloves garlic
  • ½ cup tahini paste
  • ½ cup lemon juice
  • 1 tablespoon hot sauce
  • 1 tablespoon kosher salt
  • ¼ cup olive oil


  • Place the cooked split peas in the processor and add the garlic, tahini paste, lemon juice, hot sauce and kosher salt. Turn on the processor and blend until a thick smooth paste begins to form.
  • Slowly add the olive oil in dribs and drabs while the processor is running (Most models have an opening you can use). Taste carefully and adjust seasonings. You want the hummus to taste bright and tangy.
