Watermelon Salad

  • 1 cup chopped watermelon
  • ½ cup chopped cooked beets
  • ¼ cup thinly sliced onion
  • ¼ cup crumbled feta cheese
  • 1 tablespoon chopped mint
  • 1 tablespoon chopped basil
  • ¼ teaspoon sea salt
  • ¼ cup summer ale
  • ¼ olive oil
  • 2 tablespoons maple syrup
  • 2 tablespoons lemon juice

Place the watermelon, beets, red onion, feta, mint and basil and mix together in a large bowl. Season with salt and toss with the ale, olive oil, syrup, and lemon juice. Taste and adjust seasonings. Serve with poached fish or shrimp
