Potato Salad - "Salt and Vinegar"

    Potato salad made easy.

    1 red onion sliced
    ¼ cup vinegar
    1 ½ teaspoon kosher salt
    2 pounds cook red potatoes
    1 teaspoon sugar
    1 heaping tablespoons Old Bay Seasoning
    ½ cup olive oil

    Marinate the onion slices in the vinegar and kosher salt for 20 minutes. Then toss the rest of the ingredients with the warm cooked potatoes. Adjust seasoning with salt if necessary. Enjoy!
