Eggplant Tomato Relish
- 1 eggplant diced
- 1/4 cup chopped garlic
- 2 cups olive oil
- 4 cups pomodoro sauce
- 1 each large zucchini diced
- 2 T fennel seeds
- 3 T zatar spice
Simmer garlic in oil until caramelized.
Add eggplant and simmer until opaque and soft.
Add the pomodoro sauce and zucchini.
Add the spices.
Simmer until eggplant is soft.
