J. Porter's Joins Locavore Movement

The success of farm-to-table restos like Westport's Dressing Room and LeFarm has helped launch a dramatic statewide shift toward locally-produced and sustainable cuisine. The latest, and perhaps the most surprising new addition to the locavore scene is J. Porter's, a well-regarded restaurant housed in Trumbull's Marriott hotel.

Marriott locations around the country began adopting more sustainable practices last year, and a select group of the hotel-owned restaurants are taking it a step further by relegating themselves to locally-farmed ingredients. According to Fairfield Green Food Guide, J. Porter's Executive Chef Chris Molyneux is now serving grass-fed beef, free-range chickens and pastured pork raised on Roxbury's Greyledge Farm. He's also using produce from Connecticut Fresh Farm Express and seafood delivered from nearby Stonington. Molyneux has even eschewed frozen food of any variety and eliminated Chilean Sea Bass from the menu because it's a threatened species. Based on the menu's initial reception, the decision appears to have been both a responsible culinary decision and a savvy marketing move.
