Chilled Lobster Roll

  • Lobster meat, 4oz. cooked and shelled
  • Celery, 1 tbsp. washed and diced
  • Onion, 1 tbsp. diced
  • Mayonnaise, 1 tbsp.
  • Lemon, ¼ cup squeezed
  • Salt and pepper to taste
  • New England-style bun 1 each
  • Butter, ¼ cup
  • Iceberg Lettuce, 2 tbsp. torn

Place lobster, onions, celery, salt, pepper, lemon juice, and mayonnaise into a bowl and lightly toss together.

Preheat skillet and melt the butter.

Place the roll in butter and flip to soak both sides. Toast to a golden brown.

Remove it from the heat and let it cool.

Place the iceberg lettuce in the roll and fill the bun with the lobster mixture and enjoy!
