Buffalo Turkey Strips

  • 1 pound fresh turkey scallopine
  • 2 eggs
  • 1/2 cup flour
  • 1 cup bread crumbs
  • 4 tablespoons butter
  • 2 tablespoons hot sauce
  • Celery sticks

Dipping Sauce:

  • 3/4 cup sour cream
  • 1/4 cup crumbled blue cheese

Cut scallopine into long thin strips. Beat eggs in a small bowl. Put flour and bread crumbs in separate small bowls. Dip each turkey strip in flour, turning to coat all sides. Dip in egg, then in bread crumbs, turning to coat all sides. Lay turkey strips on a foil-lined roasting pan. Bake in a 350-degree oven for 10 to 15 minutes or until turkey is cooked.

While turkey is cooking, combine butter and hot sauce in a small pan over low heat. Cook, stirring constantly, until butter is melted and mixture is smooth. Do not allow the butter to separate.
When turkey strips are cooked, remove pan from the oven and transfer the turkey to a bowl. Pour the hot sauce over the turkey, toss gently and lay the strips on the roasting pan. Return to the oven for 2 minutes.

To make dipping sauce, mix together sour cream and blue cheese. Serve turkey strips with celery sticks and dipping sauce. Serves 4.
