Country Ham with Maple Red Eye Gravy

Serves:  4

4  Country Ham Slices-sliced 1/3” thick, patted dry with paper towel
1  Tbsp. Vegetable Oil
1  Cup  Black Coffee
¼  Cup   Maple Syrup
To Taste:  Salt and Black Pepper

Heat a saute pan on medium heat. Add vegetable oil to pan and add ham slices. Reduce
heat to medium low and cook for about 5 minutes on each side until a nice deep golden
brown color appears on the ham and leaves the same color glaze on the bottom of the
pan. Flip over and repeat on the second side.

Remove the ham and pour out any excess oil. Place pan back on the heat, increase to
high and add the coffee, stirring and scraping the bottom of the pan to release the glaze
sticking to the bottom. Bring to a full boil and cook down until less than half of the
coffee remains. Drizzle in the maple syrup and cook until a light syrupy consistency is
reached. Season to taste with salt and black pepper. Serve over the ham, with biscuits,
eggs, grits, etc.
