End of Summer Corn and Tomato Salad

Ingredients:

 

  • 3 ears of sweet corn, husked and kernels removed
  • 5 plum tomatoes, chopped
  • 1 clove garlic, minced
  • 1 jalapeno pepper, minced
  • ¼ cup chopped cilantro
  • Juice of 2 limes
  • 2 Tbsp. olive oil
  • 1 Tbsp. honey
  • Salt and pepper to taste

Instructions:

  • Place sweet corn kernels, chopped tomato, garlic, jalapeno and cilantro in a bowl.
  • Add lime juice, olive oil, honey and salt and pepper.
  • Taste and adjust seasonings with salt and pepper if necessary.
