Oatmeal Toffee Cookies

Makes About 24 Small Cookies

  • 1 Stick Softened Butter
  • 1 Cup Light brown sugar packed
  • 1 Egg
  • 1 tsp. Pure Vanilla Extract
  • 7/8 Cup All-Purpose Flour
  • ½ tsp. Baking Soda
  • ¼ tsp. Salt
  • 1 ½ Cups Quick-Cooking Oats
  • ¾ Cup Toffee Bits

• Preheat oven to 375°F. Line cookie sheet with parchment paper. Cream the butter and brown sugar until smooth, about 1 minute. Add eggs and vanilla mix until smooth. Add flour, baking soda, and salt; mix until blended.

• Stir in oats and toffee bits. Portion with a small scoop about 1 ½” apart onto prepared cookie sheet. Bake about 10 minutes or until edges are lightly browned. Let cool and enjoy.
