Crispy Apple Chip and Ice Cream Stack

  • 1 Granny Smith Apple-not peeled, cored, sliced into 2 mm. thick rings
  • ½ Cup Sugar
  • 1 Tbsp. Butter-melted
  • 1 Pint Vanilla Ice Cream-any favorite
  • As Needed Powdered Sugar, Caramel Sauce to Garnish

Preheat oven to 250ºf. Lay out the apple slices onto the work area and lightly pat both sides dry with a paper towel. Lightly spray the backside of two very flat cookie sheets with vegetable spray. Place the sugar into a shallow dish, spreading out. Very lightly brush the melted butter onto one side of the apple slices. Press one apple slice at a time, butter side down into the sugar, pressing lightly to allow sugar to stick. Place each apple slice sugar side down  onto the greased cookie sheet. One apple should give you at least 12 slices, but make extra for eating, or to account for breakage.

Place the cookie sheets in the oven for about 1  hour.  To test if the apple chips are done, simple remove one chip (leave other in the oven) and allow it to cool for a few minutes on a cooling rack. If the chip is crisp, you can quickly remove all of the other chips to the cooling rack.

To make the dessert, lay out one apple chip onto each of four dessert plates. Place a small scoop of ice cream on top of the chip, add another chip, more ice cream, ending with another chip on top. Garnish with some fresh sliced apple, powdered sugar and caramel sauce if desired.
