Serves four or more
- 2 cups of water
- ½ cup sugar
- 2 large rosemary sprigs, crushed gently
- ¾ cup fresh lemon juice
- Zest from two lemons
- Heat water, sugar and rosemary until just boiling. Remove from heat let rosemary steep for 30 minutes.
- Strain and stir in the lemon juice and zest.
- Let cool to room temperature and divide evenly into serving containers or ice shaver cups. Freeze fully for four hours or overnight.
- When ice is frozen, it can be shaved with an ice shaver for a fluffy texture or quickly pulsed in a food processor, or served as it.
- Garnish with fresh berries of the season, a crisp cookie and a rosemary sprig. Enjoy!
