This recipe makes 8-10 servings.
- 4 pounds red bliss potatoes
- 1 small red onion, sliced
- 2 Tbsp. chopped parsley
- 1 cup Italian dressing
- Place the potatoes in a pot large enough to hold them.
- Cover with cold water and bring to a simmer.
- Simmer until the potatoes are cooked.
- Drain and place into a large mixing bowl.
- Mash with a large kitchen spoon and toss in the sliced red onions and parsley.
- Add the cup of Italian dressing and mix well.
- Serve warm.
