Dressing (yields about 1 qt)
- 2 oz minced ginger
- 2 oz minced garlic
- 4 lemons, juiced
- ¾ cup soy sauce
- ¾ cup mirin
- 2 ½ cups 10% oil
- 1 tsp chili flake
- 1 tsp ground black pepper
- 1 tbs sesame oil
- ½ cup maple syrup
Instructions:
- Finely mince the garlic and ginger. Put all in the blender and puree.
Sticky Rice
Ingredients:
- 2 c sushi rice
- 2 ½ c water
- 1 tsp kosher salt
- 2 tbs Mirin
Instructions:
- Soak rice in cold water for a half hour or more then strain and rinse with more cold water.
- Add rinsed rice and 2 ½ c water with salt to rice cooker and turn on for automatic timer or set to 15-20 minutes of cook time and let stand 5 minutes, then toss with Mirin.
Assembly
Ingredients:
- 1 c medium dice seedless watermelon
- 1 bunch scallion
- 1 tsp sesame seeds
- 1 radish, shaved thin
- ¼ cucmber, shaved thin
- ½ avocado, medium dice
Instructions:
- Place 1 cup of warm (or cold) cooked sticky rice in bottom of dish.
- Dress watermelon with 1 oz of dressing and put on top of rice. Garnish the top of dish with rest of ingredients
